The ash wood handle sits so comfortably in my hand that trimming a whole chicken felt effortless, and the forged steel blade glided through joints without any wrestling. Cleanup took seconds since the hammered finish doesn’t seem to trap anything.

The hammered finish on the blade actually helps the meat release instead of sticking, which made trimming silver skin so much easier than my old knife. It's the perfect weight for detailed work—not too heavy, not too flimsy.
